Naiara Amat Goñi She is a 35-year-old woman from Pamplona who embarked on the adventure of creating her own cafeteria in a very spacious 260 square meter premises: “I’ve worked in cafes behind the bar since I was 17. “I love it and have been learning more about specialty coffees since 2016.”

“I really like the cafes of Barcelona and Madrid, which are a different style than what we see here. I think Pamplona is ready to go further. It is a specialized cafeteria where we offer craft beer, wines… It’s a little more comprehensive than what we currently mean by cafeteria,” says Naiara.

They have a menu of toasts available all day and emphasizes that they serve at all hours: “Beyond breakfast, lunch and dinner. It’s enough for the whole day. There are people who eat at noon and others at four in the afternoon when they leave the office. It’s an all-hours service,” explains the owner.

It is a very spacious place with lots of light and a large window where you can see the whole Aralar street: “What we were looking for It’s a very natural, basic and comfortable space. It’s a space for the whole family, for all audiences, for groups and above all we want to provide comfort to the customer with numerous tables, chairs and armchairs,” explains Naiara.

It’s a cafeteria that will bring a lot of life to the old Salesian neighborhood: “There are several schools nearby and a Civivox will open very soon with an auditorium. In addition, in this area you can breathe a lot of peace. It is a very calm environment and it’s very close to the center,” explains the owner of the cafeteria.

Naiara had already worked in franchises and wanted something of her own “with a more modern concept since at the back We will open a multipurpose room. We will give coffee tastings, beer tastings, trainingsand will be available for catering. Gosaria will be in continuous change and continuous movement,” he emphasizes.

Currently nine people work in the new cafeteria: “There are kitchen and bar staff. With me there are nine of us. It is also a very motivated team, which I know from my previous career and which has a lot of confidence in the project,” concludes Naiara.

The Gosaria cafeteria works with IAMay Coffee, a roaster from Cartagena (Murcia) which provides blend coffee, a mixture of coffee beans from different origins, from Colombia and Ethiopia.
