Eggplant and Mushroom Mini Pizzas Bring a Very Ancient Food Combination to the Future.   • 4 mushrooms
  • 1 eggplant
  • 1 green pepper
  • 1 white onion
  • 120 grams of mozzarella cheese
  • 60 grams of fried tomatoes
  • Olive oil

  • How to make eggplant and mushroom mini pizzas:

    1. Cut the previously washed eggplant into slices of 1,5 centimeters thick.
    2. Put the vegetables in a bowl with salted water. for 30 minutes to eliminate the bitter taste.
    3. Cut the green pepper and onion into strips. Brown in a pan with very hot oil for 2 minutes.
    4. Add the mushrooms washed and cut into slices in the pan. Season and cook with the rest of the vegetables.
    5. Drain the eggplants and grill them on both sides until golden brown..
    6. Arrange the eggplant slices on a baking tray and spread a portion of fried tomatoes on top.
    7. Put the sautéed vegetables on the tomatoes and spread the cheese.
    8. Cook the mixture for 10 minutes at 180 degrees Celsius, or until the cheese is melted.
    9. Another option for this dish would be to base all of these vegetables on a thin, more traditional pizza dough, either with wheat flour, rye flour, bran, etc.
