  • 400 grams of cooked chickpeas
  • 200 grams of spinach
  • 150 grams of mozzarella cheese
  • 40 grams of parmesan
  • 3 cloves of garlic
  • 2 eggs
  • ½ white onion
  • Triple 0 wheat flour
  • Vegetable oil
  • salt and pepper
  • For the dough:

    • wheat flour
    • Breadcrumbs
    • 2 eggs

    How to prepare chickpea and spinach croquettes:

    1. Place chickpeas, spinach and parmesan in food processor. Mix until you obtain a homogeneous paste.
    2. Add the finely chopped vegetables to the dough as well as mozzarella, season and knead.
    3. Divide the dough into 18 portions, form cylinders and set aside.
    4. Sift the flour and place it in a container.
    5. Add the beaten eggs to a separate bowl from the flour.
    6. Dip the croquettes in the flour then in the egg mixture to coat them..
    7. Coat each croquette with breadcrumbs and set aside.
    8. Heat plenty of oil in a non-stick pan and fry the croquettes until golden brown on all sides..
