The difficulty of the third star

Aponiente was one of the last restaurants to obtain the third Michelin star in Spain

The first restaurant to earn a third Michelin star in Spain was Zalacaín in 1987. Today there are 16 restaurants that have their own third Michelin star, the last to have done so were Noor de Paco Morales and Enjoy Eduard Xatruch, Oriol Castro and Mateu Casañas.

The absence of a new three-star is not unprecedented. Neither the 2021 Guide nor the 2022 Guide had any new three Michelin stars among their pages, which is why Spain now has three editions without this new addition at the top of its ranking.

Are there foolproof criteria for obtaining a Star?

From the Michelin Guide they state that “There is no secret mathematical formula: the only thing we look for is truly exceptional cuisine. Some MICHELIN stars are innovative, others traditional. There are restaurants that offer daily menus, others with a la carte proposals… and there are both formal and We believe that not all the restaurants we offer will please anyone and that is how it should be The only thing we say. is that “these are the restaurants with the best cuisine in which to live the most remarkable culinary experiences.
