The Nomad restaurant of Pamplona opened its doors a few weeks ago, succeeding the former Iñaxio restaurant, which closed years ago. Completely renovated, modern, with more light and quality traditional cuisine at a very good price.

Three young Navarrese embark on a gastronomic adventure in Pamplona. It is about Igantzi Jáuregui Ezkurra, 35 years old, Ekaterina Legarra Sádaba, 36 years old, and Adrien Preciado Sánchez, 35 years old.

They completely renovated the premises and after opening at the end of September they are very happy: “We had a very good reception from customers and neighbors. On weekends, we are full. During the week, things are progressing very well with a lot of reservations.”they assure.

There is a daily menu at 18 euros from Tuesday to Friday and there is a menu every day: “What is very popular is the cod dish with tripe and snout. People are a little shocked. It’s like the sea and the mountains. It’s a stew with a candied cod taco on top,” they point out.

There are also interesting things like Sushi crispi, “fried sushi rice and a red tuna tartare on top”. Pan bao “which is a milk bread that accompanies Iberian pork, a spicy sauce and vegetables”.

Other dishes in high demand are “octopus and crayfish risotto, and other carabineros rice dishes, in addition to suckling pig, chops and sirloin, which are more traditional dishes,” they indicate.

This is not a “battle” restaurant. Quite the contrary. Even The daily menu “is a very careful menu, composed of meat, fish and fresh vegetables. Decorated with flowers. Well plated. Many tell us that it looks like a menu and not a daily menu. »

The idea of ​​recovering the premises was an offer that came to Igantzi Jáuregui. “I knew Ekaterina and Adrien, who met at hotel school. I proposed to them the idea of ​​getting together and bringing this place to life.”

“As soon as we walked in the door we loved it. Small and cozy, just what we were looking for. We saw that the kitchen was very good, large. We looked at each other and said it was time to start. We are going to try it in Pamplona,” explains Igantzi, who has already owned a restaurant in Echarren (Iratzar) for twelve years and has experience in starting up.

All three are cooks, but It is Ekaterina and Adrien “who are machines” who cook in the restaurant from Pamplona with two girls who help them by serving customers at the table.
