The marriage formed byMaximo Diez Rincon and his wife Maria Luisa Villanuevaboth natives ofMarcillehave been working in their butcher’s shop for 30 years in Pamplona.
This is the Díez butcher shop, which is in the Irunlarrea Street 29-31in the Mendebaldea district of the Navarrese capital. Very close to the other establishments that we have known in this local trade section.

Máximo Díez is the jotero butcher, as they like to define themselves. He has just turned 65 and has decided to retire: “The truth is that I had a hell of a year last year. I am sad to leave, but I am more tired than before because I have to work like when I was 20, since I have no employees, and the years weigh on me.”
He has always worked with his wife, but the problem is different: “There is no relief. My children did not want to, Unless someone comes… Nobody wants it. If you told me it doesn’t work, but it’s a business that works. It’s a shame,” said the butcher.
Maximum He started in this profession at the hands of his father: “My father worked in a sausage factory and since before they didn’t ask you if you liked it or not… I started and I got my brothers into the butcher’s shop, but I find myself alone.”
The butcher shop was changing and now rented the business to a pre-cooked catering company who is waiting for authorization from the Pamplona City Council to start working “because the authorization is different from that of a butcher’s shop,” explains Máximo.
The closure of the Díez butcher’s shop took place on July 29. Máximo took the opportunity to sing his last jota as a butcher and thank his customers for the years of trust: “Today is a special day. It’s my last jota as a butcher. I’m a little excited,” he said.
The jota says this: “I want to thank all our friends. I want to thank you for how much I enjoyed being able to serve you. Being able to serve all our friends. Thank you and kisses to all.”
