The XXIII Buscasetas-Terre de Saveurs Conference They took the plunge in Madrid and broke the participation record with 165 establishments. The Deputy Minister of Community Agrarian Policy and Rural Development, Jorge Llorente, accompanied by the director of the Agrarian Technological Institute of Castilla y León (Itacyl), Rafael Sáez, presented this Monday this event organized by the Directorate, through Tierra de Sabor, and the European Community of Eurotoques Chefs, and which will take place andbetween November 1 and 17.
This initiative, defended this morning from the Makro company headquarters in Madrid, aims to raise awareness of the great mycological potential of Castilla y León through menus and tapas which will be prepared by 165 establishments, 16 more than last year. Among them, for the first time, places outside Castilla y León will participate, including nine bars and restaurants from the Community of Madrid.
During these 18 days they will be offered menus and tapas with porcini mushrooms, chanterelles, trumpets of death, wild eels, oyster mushrooms or any other mycological variety among the many offered by the territory of the Community. Among the participating establishments, seven are Michelin-starred and 13 with different recognitions within the Repsol Guide.
By carrying out this type of gastronomic actions, the Junta de Castilla y León aims to strengthen the axis formed by the territory, food and gastronomy of the Community to advance in the consolidation of Tierra de Sabor as a guarantee brand unique, which ensures the. consumer of the highest quality among the almost 6,000 products it brings together, and stands out as a key driver for the almost 900 producers authorized to wear the yellow heart on their labeling, especially if we take into account the fact that Almost all of them are located in rural areas.
SO, for menu box finder121 establishments participate: 19 in Valladolid and Zamora in each case, 16 in Burgos and León, 11 in Soria, 10 in Palencia, eight restaurants in Ávila and Segovia, seven in Salamanca and as many in Madrid.
In the Tapa Modality and Mycological DishesThere will be 44 establishments: 13 in Valladolid, seven in Zamora, five in León, three in Burgos, Palencia, Salamanca, Segovia and Soria and two in Ávila and Madrid.
