What should the recipe look like?

The competition has a modality completely amateuropen to all those who want to try their hand at preparing the traditional Cordovan oxtail stew. To guarantee a typical homemade stew, the organization has established that professional cooks and chefs are excluded from the competition.

Candidates must present their recipe in the traditional way, with the oxtail served on the bone and a homogeneous and creamy sauce, respecting the official recipe of the Brotherhood. Furthermore, the use of extra virgin olive oil and oxtail It is mandatory and only allows modifications to the ingredients which do not alter the basis of the recipe.

Likewise, each participant must bring the stew beforehand made in a panwith the possibility of heating and serving on site. The organization will provide a stove, a spoon and a forkin addition to a presentation plate, leaving the participant to choose the utensils he considers necessary for the presentation and final presentation.

Rewards and how to register

The competition prizes include recognition and financial compensation for the winners. three best dishes. The winner will receive 600 euros and commemorative recognition, while second and third places will get prizes of 300 and 150 eurosrespectively.

A professional jury in oxtail

The competition jury will be made up of representatives of the Chair of Gastronomy of Andalusia, the University of Cordoba, the Córdoba Oxtail Gastronomic Brotherhood and Piedra supermarkets.
