The European Union has registered the new protected geographical indication“Torrezno de Soria” in the register of protected designations of origin, according to a regulation published this Tuesday in the Official Journal of the European Union.
With this registration, the trademark “Torrezno de Soria” is now protected by intellectual property rightsas reported in a press release from the Ministry of Agriculture, Fisheries and Food, which channeled the request for distinction in Brussels for the famous cuisine of Castilla y León.
Torrezno de Soria is characterized by its rectangular shape and its production process. white pork belly. Its cut structure is formed by the skin and three layers: bacon-lean-bacon. This product can be marketed in whole pieces (packaged or not) or in cut and sliced formats, always packaged to guarantee traceability to the consumer and that the product is indeed IGP Torrezno de Soria, reports Ical.
Made exclusively in the province of Soria, it must comply with strict quality controls and specific standards during the reception phases, salted, marinated (optional) and driedwhich must be carried out entirely in this region. The meat industries that produce this torrezno are subject to official control to guarantee compliance with these standards and preserve the authenticity of the product.
Each piece of torrezno de Soria will have a physical guarantee badge which incorporates the IGP logo, the words “Protected Geographical Indication” and the symbol of the communityor, accompanied by a unique identification number.
The ministry explains that with this distinction, Soria Torrezno producers will be able to guarantee consumers that their product meets the strict standards of quality and tradition established within the PGI. HE will thus protect the name and characteristics which link him only to Soria. In addition, a new door opens for the promotion and marketing of this product andn international markets.
