Most models that can be found on the market contain a class of chemical compounds called PFAS (perfluoroalkyl and polyfluoroalkyl substances)which are used because of their ability to repel water, grease and resist high temperatures. This gives them a non-stick appearance ideal for cooking, which leads us to use it in a wide variety of recipes.

The hidden dangers of parchment paper

PFAS, known as “forever chemicals,” are extremely tough compounds that do not break down easily and can accumulate both in the human body as in the environment.

Francesco Romizi, ISDE communications manager, advises consumers to check labels when purchasing parchment paper because many products contain PFAS. Prolonged exposure to these compounds can have cumulative health effects.

In summary, although parchment paper is very useful, its use can pose health and environmental risks due to the presence of PFAS. It is therefore essential to choose safer products.

The best alternatives

There are several safer and more sustainable alternatives which allow us to cook efficiently without endangering our health or the environment. Below are some of the most recommended options.

One of the simplest options compared to traditional parchment paper is ecological parchment paper. This type of paper is made without the use of PFAS or other toxic chemicals. While not all eco-friendly papers are free of these compounds, many manufacturers are making great efforts to create safer options using organic and biodegradable materials.

Another increasingly popular option is reusable silicone mats. These mats, placed on oven trays, provide a durable non-stick surface without the risk of releasing toxic substances. Silicone mats are completely reusable, which also makes them a more sustainable option. Heat resistant, they are perfect for cooking a wide variety of foods, from cakes and biscuits to vegetables and meats.

If you prefer a more traditional approach, using natural fats such as olive oilbutter or coconut oil can be a great alternative to parchment paper. A light touch of oil or fat on the baking sheet can prevent food from sticking, while adding flavor. This approach eliminates the risks associated with chemicals in parchment paper, while providing a healthier, more natural option.

A lesser known but very effective resource is the use of natural leaves. In many cultures, especially in Asia and Latin America, banana, grape, or cabbage leaves are used to wrap foods and cook or steam them. These all-natural, biodegradable sheets not only provide a great alternative to parchment paper, but also impart a unique flavor to foods.

Finally, a more practical option is to use non-stick cookwaresuch as baking sheets or pans with ceramic, stainless steel or cast iron coatings. These utensils allow you to cook efficiently without food sticking and are free from dangerous chemicals.
